  • 1 garlic clove
  • 20 g ginger
  • 10 g coconut oil
  • 10 g vegetable spice paste
  • 20 g red curry paste
  • 2 carrots
  • 150 g mushrooms
  • 500 g water
  • 400 g coconut milk
  • 100 g rice noodles
  • Juice of ½ lime
  • 30 g young spinach
  • 2 spring onions
  • 1 chili

Instructions

  1. Prepare all fresh ingredients: peel garlic and ginger, slice carrots and mushrooms, chop spring onions, and extract juice from lime.
  2. In the Thermomix®, combine coconut oil, minced garlic, minced ginger, vegetable spice paste, red curry paste, sliced carrots, and mushrooms. Add water and cook for 15 minutes at 100°C on speed level 1.
  3. After cooking, add coconut milk, cooked rice noodles, lime juice, young spinach, and sliced chili into the mixture. Simmer for an additional 5 minutes at the same temperature.
