  • 2 teaspoons sourdough starter
  • 3 tablespoons all-purpose flour
  • 1/4 cup active sourdough starter (100% hydration)
  • 1 1/3 cups + 2 tablespoons water
  • 2 teaspoons fine sea salt
  • 4 cups + 2 tablespoons bread flour

Instructions

  1. Prepare your starter by mixing sourdough starter, all-purpose flour, and water in a bowl. Let it sit at room temperature for about 12 hours until bubbly.
  2. In a large bowl, mix active starter with 1 1/3 cups of water. Stir in fine sea salt and bread flour until no dry spots remain.
  3. Knead on a floured surface for about 10 minutes until smooth and elastic.
  4. Transfer to an oiled bowl, cover with a damp cloth, and let rise for about 4-6 hours until doubled in size.
  5. Shape the dough into a round loaf and place it in a floured proofing basket.
  6. Let it rise for another 2-4 hours until puffy.
  7. Preheat the oven to 450°F (232°C) with your Dutch oven inside for about 30 minutes.
  8. Carefully place the dough into the hot Dutch oven, cover with the lid, and bake for 30 minutes. Remove the lid and bake for an additional 20 minutes until golden brown.
  9. Transfer to a wire rack to cool completely before slicing.
