  • 1 lb lean ground beef (96/4)
  • 1 lb russet potatoes (chopped)
  • 1/2 white onion (chopped)
  • 1 cup shredded cheddar cheese
  • 1/4 cup mayonnaise
  • 1/4 cup ketchup
  • 1/4 cup dill pickles (chopped)
  • 1 tbsp dill pickle juice
  • Fresh toppings: chopped tomatoes, lettuce, and pickle chips

Instructions

  1. Preheat oven to 375°F (190°C). Chop potatoes into small pieces.
  2. In a skillet over medium heat, add olive oil, chopped potatoes, and water. Season with salt and pepper; cook until softened (5-10 minutes). Transfer to a baking dish.
  3. In the same skillet, cook ground beef and onions until beef is browned. Season with spices and mustard; combine with potatoes in the baking dish.
