  • 1/2 pound (250 grams) ground beef, 60-70% lean
  • 1/2 pound (250 grams) ground chicken (or pork)
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon ground black pepper
  • 1 teaspoon salt
  • 1 large egg
  • 1/2 cup Italian breadcrumbs
  • 1/2 cup freshly grated Parmesan cheese (or Parmigiana-Reggiano)
  • 2-3 tablespoons fresh basil (or parsley, finely chopped)
  • 1/2 cup milk (or beef stock)
  • 1 bay leaf
  • 1/4 teaspoon red chili flakes (adjust to your liking)
  • 28 oz (800 grams) crushed tomatoes
  • 2 tablespoons tomato paste
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon brown or white sugar
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground black pepper

Instructions

  1. Heat olive oil in a large skillet over medium heat. Sauté chopped onion until soft, then add minced garlic and cook until fragrant. Set aside.
  2. In a mixing bowl, combine ground beef, ground chicken (or pork), Italian seasoning, black pepper, salt, egg, breadcrumbs, grated Parmesan cheese, and fresh basil. Mix gently until just combined.
  3. Form the mixture into meatballs (1-2 inches in diameter) and set aside.
  4. In the same skillet, add more oil if needed and brown the meatballs on all sides.
  5. Remove meatballs briefly and prepare the sauce by adding crushed tomatoes, tomato paste, milk (or stock), bay leaf, red chili flakes, Italian seasoning, brown sugar, salt, and pepper to the skillet. Stir well.
  6. Return meatballs to the skillet and let simmer for 15 minutes on low heat until cooked through.
