  • 1 lb bulk breakfast sausage
  • 1 medium red pepper, chopped
  • 1 small onion, chopped
  • ½ cup chopped green onions
  • 2½ cups shredded cheddar cheese (divided)
  • 10 whole flour tortillas
  • 2 cups half-and-half
  • 6 whole eggs
  • 1 tablespoon flour

Instructions

  1. In a large pan, brown the sausage with peppers and onions. Cool slightly.
  2. In a bowl, mix the cooled filling with green onions and 2 cups of cheddar cheese.
  3. Scoop filling onto each tortilla, roll them tightly, and place seam side down in a greased baking dish.
  4. Whisk together half-and-half, eggs, and flour in another bowl; pour over tortillas. Cover and refrigerate overnight.
  5. Preheat oven to 350°F (175°C). Bake covered for 30–40 minutes until set. Uncover, add remaining cheese, and bake an additional 10 minutes until melted.
