  • 1 cup brown sugar
  • 2 large eggs
  • 1.5 tsp vanilla extract
  • 2.5 cups all-purpose flour
  • 1 tsp cinnamon powder
  • 1 tsp cornstarch
  • 1 tsp baking soda
  • 1/2 tsp baking powder
  • 1.5 cups pecans (toasted and chopped)
  • 1/2 cup toffee bits (optional)

Instructions

  1. In a mixing bowl, cream together melted butter, granulated sugar, and brown sugar until light and fluffy.
  2. Beat in the eggs and vanilla extract until smooth.
  3. Gradually add the flour, cinnamon, cornstarch, baking soda, and baking powder; mix until just combined.
  4. Fold in the toasted pecans and optional toffee bits.
  5. Chill the dough in the refrigerator for 30–45 minutes.
  6. Preheat oven to 350°F (175°C). Scoop dough into balls and place on a lined baking tray.
  7. Bake for 11–14 minutes or until edges are golden brown.
  8. Allow cookies to cool on the tray before transferring them to wire racks.
