  • 1 1/3 cups chopped carrots
  • 1 cup chopped celery
  • 1 cup chopped yellow onion
  • 2 cloves garlic
  • 3 cups low-sodium chicken broth
  • 3 1/2 cups peeled and cubed russet potatoes
  • 3 cups chopped broccoli florets
  • Salt and pepper to taste
  • 6 tbsp all-purpose flour
  • 3 cups milk (preferably 1% or 2%)
  • 1/2 cup heavy cream
  • 2 cups shredded sharp cheddar cheese
  • 1/3 cup finely shredded parmesan cheese

Instructions

  1. Melt butter in a large pot over medium heat.
  2. Sauté carrots, celery, and onion for about 3–4 minutes until softened.
  3. Add minced garlic and sauté for an additional 30 seconds.
  4. Stir in chicken broth, cubed potatoes, thyme, salt, and pepper; bring to boil.
  5. Reduce heat, cover, and simmer for about 15 minutes.
  6. Add broccoli; cook for an additional 5 minutes until tender.
  7. In a separate saucepan, melt remaining butter; whisk in flour and cook for one minute.
  8. Slowly add milk while whisking until thickened; mix in heavy cream off heat.
  9. Combine the thickened mixture with the soup, then stir in cheeses until melted.
