  • 1 pound Italian Sausage (cooked)
  • 1 yellow onion (chopped)
  • 7 large eggs
  • 1/2 cup milk
  • 20 ounces frozen diced hash browns
  • 8 ounces mild cheddar cheese (grated)
  • Salt & pepper (to taste)

Instructions

  1. Preheat oven to 350°F. Spray a 9 x 13 medium casserole dish with non-stick spray.
  2. In a skillet over medium heat, cook Italian sausage until browned. Add chopped onion; sauté until translucent.
  3. In a large mixing bowl, combine cooked sausage, onions, eggs, milk, frozen hash browns, salt, and pepper. Pour into prepared dish, reserving 1 cup of cheese for topping.
  4. Bake for 35 minutes; remove from oven and top with reserved cheese. Bake an additional 8 minutes until bubbly.
  5. Let cool for 15-20 minutes before serving.
