  • 1.5 pounds ground chicken or turkey
  • 6 ounces whole milk ricotta
  • 1/2 cup Italian breadcrumbs
  • 1/4 cup sun-dried tomatoes
  • 2 cups freshly grated Parmesan cheese
  • 6 strips of bacon
  • 5 ounces baby spinach
  • 1 large egg
  • Heavy cooking cream

Instructions

  1. Preheat oven to 450°F (235°C) and line a baking sheet with parchment paper.
  2. Soak breadcrumbs in milk for 2 minutes.
  3. In a food processor, finely chop onion, garlic, parsley, and sun-dried tomatoes.
  4. In a bowl, mix the vegetable mixture with ground chicken, soaked breadcrumbs, egg, ricotta cheese, Parmesan cheese, Italian seasoning, and salt until combined.
  5. Shape into 18-20 meatballs and place on the baking sheet; lightly spray with cooking oil.
  6. Bake for 15-20 minutes until crispy outside and cooked through.
  7. In a skillet, fry bacon until crispy; remove and sauté garlic in butter before adding heavy cream and Parmesan to make the sauce.
  8. Stir in spinach until wilted, then add meatballs to simmer for 2 minutes before serving.
