  • 50 grams active sourdough starter
  • 50 grams sugar
  • 10 grams salt
  • 114 grams butter
  • 15 grams honey
  • 30 grams powdered sugar
  • 2 grams cinnamon
  • 9 grams flour

Instructions

  1. Mix flour, water, sourdough starter, sugar, and salt until a shaggy dough forms. Cover and let sit.
  2. After 30 minutes, stretch and fold the dough; repeat if desired.
  3. Let the dough rise at room temperature for 10-14 hours until it has risen about 75%.
  4. Prepare cinnamon honey butter by mixing butter, honey, powdered sugar, cinnamon, and flour.
  5. Shape the dough into a rectangle, spread half the butter on top, fold like a letter, then roll tightly.
  6. Place in a proofing basket and refrigerate for at least 8 hours.
  7. Preheat oven and Dutch oven to 450F.
  8. Score the top of the dough; bake covered for 25 minutes then uncovered for an additional 10–15 minutes.
  9. Cool on a rack before serving.
