  • ⅓ cup brown sugar (packed)
  • 1½ tablespoons all-purpose flour
  • 2½ teaspoons ground cinnamon

  • 1 cup unsalted butter (softened but still cool to the touch)
  • 1 ⅓ cups granulated sugar
  • 1 ¾ teaspoons pure vanilla extract
  • 1 large egg
  • 1 large egg yolk
  • 2 ¾ cups all-purpose flour
  • ¾ teaspoon baking powder
  • 1 teaspoon cornstarch
  • ¼ teaspoon salt

Instructions

  1. Preheat your oven to 350°F and line baking sheets with parchment paper.
  2. Prepare the cinnamon swirl by mixing softened butter, brown sugar, flour, cinnamon, and salt in a small bowl.
  3. In a large bowl, cream softened butter and granulated sugar until light and fluffy. Add vanilla extract, egg, and egg yolk; mix until combined.
  4. In another bowl, whisk together flour, baking powder, cornstarch, and salt; gradually add this mixture to the wet ingredients until just combined.
  5. Form tablespoon-sized balls of dough, flatten slightly, place half a teaspoon of cinnamon filling in the center, seal it inside the dough ball.
  6. Arrange on prepared baking sheets and bake for approximately 11 minutes or until edges are lightly golden.
