  • 3 cups vegetable broth
  • 1 large carrot, sliced
  • 1 medium potato, cubed
  • 1 cup spinach, chopped
  • For dumplings: 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup water

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Sauté diced onion until translucent (about 5 minutes).
  3. Add minced garlic and grated ginger; cook for another minute.
  4. Stir in curry powder and turmeric; coat the onions well.
  5. Pour in coconut milk and vegetable broth; mix thoroughly.

  7. Meanwhile, prepare dumplings by mixing flour, baking powder, salt, and water until a dough forms. Shape into small balls.

  9. Add chopped spinach and seasonings; stir for an additional 2 minutes until spinach wilts.
