  • 1 lb boneless, skinless chicken breast or thighs
  • 3 medium russet potatoes, diced
  • 1 medium onion, chopped
  • 2 medium carrots, diced
  • 2 stalks celery, diced
  • 3 cloves garlic, minced
  • 4 cups low-sodium chicken broth
  • 1 cup heavy cream (optional)
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • Salt and pepper to taste
  • 2 tbsp olive oil or butter
  • Fresh parsley for garnish (optional)

Instructions

  1. Prepare all ingredients by chopping vegetables and shredding cooked chicken into bite-sized pieces.
  2. In a large pot, heat olive oil over medium heat. Sear chicken for about 5-7 minutes on each side until golden brown. Remove from pot.
  3. In the same pot, sauté onions, carrots, and celery for 5-6 minutes until softened. Add garlic and cook for another minute.
  4. Return seared chicken to the pot with potatoes, broth, thyme, and rosemary. Bring to boil then reduce heat to simmer for 25-30 minutes until potatoes are tender.
  5. Shred the chicken again if necessary and stir in heavy cream if desired. Season with salt and pepper before serving.
