  • 2 medium yellow onions, diced
  • 4 cups vegetable or chicken broth
  • 1 cup whole milk or heavy cream
  • 1 tablespoon olive oil
  • Salt and freshly ground black pepper, to taste
  • 1 bay leaf
  • 1 teaspoon fresh thyme leaves
  • Fresh parsley, chopped, for garnish
  • Crusty bread or toasted baguette slices, for serving

Instructions

  1. Preheat your oven to 375°F (190°C). Cut the tops off the garlic heads, drizzle with olive oil, wrap in foil, and roast for 35-40 minutes until soft.
  2. In a large pot over medium heat, add olive oil and sauté the diced onions until golden brown (15-20 minutes).
  3. Squeeze the roasted garlic into the pot along with the thyme leaves, bay leaf, salt, and pepper. Add the broth; bring to a gentle boil then simmer for 15-20 minutes.
  4. Remove the bay leaf and blend the soup to your desired texture using an immersion blender.
  5. Stir in milk or cream gently; adjust seasoning as needed.
  6. Serve hot garnished with fresh parsley alongside crusty bread.
