  • 1 large yellow onion (diced)
  • 1 celery rib (diced)
  • 2 lbs carrots (peeled and sliced)
  • 2 garlic cloves (minced)
  • 4 cups chicken stock
  • 1/2 cup milk
  • 1/2 cup heavy cream
  • Sea salt and black pepper to taste

Instructions

  1. In a Dutch oven, brown the chopped bacon over medium heat until crispy. Remove with a slotted spoon.
  2. In the same pot, sauté diced onion, celery, and sliced carrots for about 6-8 minutes until softened. Add minced garlic, sea salt, and black pepper; cook for another minute.
  3. Pour in the chicken stock; bring to a simmer and cover partially. Cook for 20-25 minutes until carrots are tender.
  4. Blend the soup using an immersion blender or in batches with a standard blender until smooth.
