  • 1 large boneless skinless chicken breast
  • Salt and pepper
  • 2 teaspoons Italian seasoning
  • ¼ cup flour
  • 1-2 tablespoons olive oil
  • ½ cup dry white wine
  • 3 tablespoons butter
  • 3 cloves garlic (minced)
  • 1¼ cups half and half
  • ¾ cup chicken broth
  • ⅓ cup grated Parmesan cheese
  • ½ lb. pasta of choice

Instructions

  1. Season the chicken with salt, pepper, and Italian seasoning. Cook in a skillet with olive oil until golden brown and fully cooked. Remove and slice.
  2. In the same skillet, sauté garlic in butter, then add flour to create a roux. Gradually stir in white wine, followed by half and half and chicken broth until smooth.
  3. Mix in cheeses until melted, then toss in cooked pasta and sliced chicken until well coated.
  4. Adjust sauce consistency with reserved pasta water if needed, garnish with lemon juice if desired, and serve warm.
