  • 1 teaspoon Italian seasoning

  • 2 cups shredded chicken breast
  • 10 oz cheese tortellini
  • 3 cups baby spinach

Instructions

  1. In a large pot, melt the butter over medium-high heat. Add the onion, carrots, and celery; cook until the onion is translucent (about 5 minutes). Stir in garlic for another minute.
  2. Sprinkle flour into the pot and stir until incorporated. Gradually add chicken stock along with salt, pepper, Italian seasoning, paprika, heavy cream, and Parmesan cheese. Bring to a boil then reduce to a simmer for about 10 minutes.
  3. Stir in the shredded chicken, tortellini, and spinach; cook until the tortellini is tender (3-5 minutes).
  4. Serve hot with an extra sprinkle of Parmesan cheese.
