Creamy Corn Chowder is the ultimate comfort food that brings warmth and satisfaction to any table. This hearty soup is a delightful blend of sweet corn, crispy bacon, and tender potatoes simmered in a luscious creamy broth.

  • 4 strips bacon
  • 1/2 medium onion (chopped)
  • 3 sticks celery (chopped)
  • 2 medium carrots (peeled and chopped)
  • 2 cloves garlic (minced)
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 4 cups corn (fresh or frozen)
  • 2 large Russet potatoes (peeled and diced)
  • 1/4 cup flour
  • 1/4 teaspoon Italian seasoning
  • 1 pinch cayenne pepper (optional)
  • Salt & pepper (to taste)

Instructions

  1. In a large pot over medium-high heat, cook bacon until crispy, about 10 minutes. Remove and set aside.
  2. Sauté onion, celery, and carrots in the bacon fat for about 5 minutes until softened.
  3. Add minced garlic and sauté for an additional 30 seconds.
  4. Stir in flour and cook for 1 minute.
  5. Gradually add chicken broth while stirring to dissolve flour completely.
  6. Mix in cream, corn, diced potatoes, Italian seasoning, cayenne pepper (optional), and reserved bacon.
  7. Bring to a boil, then reduce heat to simmer with lid slightly ajar for about 15-20 minutes until potatoes are tender.
  8. Season with salt and pepper to taste before serving.
