  • 1 yellow onion, diced
  • 2 cloves garlic, minced
  • 24 oz low-sodium chicken broth
  • 2 cans (15 oz) great Northern beans, drained and rinsed
  • 4 oz reduced-fat cream cheese
  • 1/4 cup half-and-half
  • Diced green chiles (hot and mild)
  • Corn kernels
  • Spices: salt, black pepper, cumin, oregano, chili powder, cayenne pepper

Instructions

  1. Place chicken breasts in the slow cooker and season with salt, pepper, cumin, oregano, chili powder, and cayenne.
  2. Add diced onion, minced garlic, great Northern beans, green chiles, corn, chicken broth, and chopped cilantro. Stir gently.
  3. Cover and cook on LOW for 8 hours or HIGH for 3 to 4 hours until chicken is cooked through.
  4. Shred the chicken in a mixing bowl using two forks; return it to the slow cooker.
  5. Mix in softened cream cheese and half-and-half until smooth. Cook on HIGH for an additional 15 minutes.
