  • 2 tablespoons olive oil
  • 2 tablespoons unsalted butter
  • 2 large yellow onions, thinly sliced
  • 8 oz mushrooms (cremini or button), sliced
  • 4 cups vegetable or chicken broth
  • 1 cup heavy cream
  • Fresh thyme
  • Fresh rosemary
  • Salt
  • Pepper

Instructions

  1. In a heavy-bottomed pot, heat olive oil and butter over medium heat. Add sliced onions and cook until golden brown (20-25 minutes). If they stick, add a splash of water.
  2. Stir in sliced mushrooms and cook for another 5-7 minutes until tender. Add minced garlic during the last minute.
  3. Pour in broth along with thyme, rosemary, bay leaf, salt, pepper, balsamic vinegar, and soy sauce if desired. Bring to a boil then simmer uncovered for 30 minutes.
  4. Remove the bay leaf and gradually stir in heavy cream. Heat through without boiling.
  5. Serve hot with optional cheese and fresh parsley on top.
