  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • 1 medium onion, diced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 4 cups chicken broth
  • 1 can (14.5 oz) diced tomatoes
  • 1 cup heavy cream
  • 1 cup spinach, chopped
  • 1 teaspoon red pepper flakes (optional)
  • Fresh basil for garnish

Instructions

  1. In a large mixing bowl, combine ground beef, ground pork, breadcrumbs, Parmesan cheese, parsley, egg, garlic, Italian seasoning, salt, and pepper. Mix gently and form into 1-inch meatballs.
  2. Heat olive oil in a skillet over medium heat and brown the meatballs on all sides (about 5-7 minutes). Remove and set aside.
  3. In the same skillet, sauté diced onion, carrots, and celery for 5-7 minutes until softened.
  4. Add chicken broth and diced tomatoes to the skillet; bring to a gentle boil.
  5. Reduce heat and stir in browned meatballs; let simmer for about 10 minutes.
