  • 3-4 lbs ripe organic tomatoes
  • 2 garlic bulbs
  • 1/2 onion
  • 1 Tbsp extra virgin olive oil
  • 1 1/2 cups organic heavy cream (or coconut/cashew cream for vegan)
  • 2 cups organic vegetable stock
  • 4 Tbsp organic tomato paste
  • Sea salt, smoked paprika, On Everything All-Purpose Blend

Instructions

  1. Preheat the oven to 400°F (200°C). Place cut tomatoes and whole garlic bulbs on a baking sheet, drizzle with olive oil, and sprinkle with sea salt. Roast for about 25 minutes until softened.
  2. In a large pot over medium heat, sauté chopped onion with a pinch of salt until translucent (about 5 minutes).
  3. Add the roasted tomatoes and garlic (squeezed from their skins) to the pot along with tomato paste, vegetable stock, seasoning blends, and smoked paprika. Simmer for an additional 10 minutes.
  4. Remove from heat and blend until smooth using an immersion blender or countertop blender. Stir in heavy cream (or vegan alternative) for added creaminess.
  5. Serve hot, optionally garnished with fresh basil or accompanied by grilled cheese sandwiches.
