  • 2 tablespoons cooking wine (optional)
  • 4 cups vegetable or chicken stock
  • 1 cup heavy cream
  • 1 tablespoon maple syrup or brown sugar
  • 1 teaspoon smoked paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 1/2 teaspoon red pepper flakes
  • Sea salt and black pepper, to taste
  • 1/2 cup freshly grated Parmesan
  • 1 tablespoon cornstarch mixed with 3 tablespoons warm water
  • 4 slices rustic bread (brioche, sourdough, etc.)
  • 4 tablespoons garlic herb butter
  • 1 cup shredded cheddar cheese

Instructions

  1. Heat olive oil in a large pot over medium heat. Add chopped onion and minced garlic; sauté until translucent.
  2. Stir in herb-roasted tomatoes and tomato paste, then add cooking wine if desired. Season with spices.
  3. Pour in vegetable or chicken stock and simmer for 20 minutes.
  4. Blend until smooth using an immersion blender.
