  • 8 oz. cherry tomatoes
  • 4 garlic cloves
  • ¼ cup sun-dried tomatoes
  • 1 (15 oz) can cannellini beans
  • 1¼ cup vegetable broth
  • 1 tablespoon tomato paste
  • ¼ cup vegan cream cheese (or coconut cream)
  • 2 cups baby greens
  • 1 tablespoon arrowroot starch

Instructions

  1. In a medium saucepan over medium heat, add oil and sauté sliced onion for 3 minutes until translucent. Add halved cherry tomatoes and cook for another 5 minutes.
  2. Stir in minced garlic, chopped sun-dried tomatoes, and tomato paste; cook for about one minute until fragrant.
  3. In a small bowl, whisk arrowroot starch with a splash of vegetable broth; mix into remaining broth.
  4. Pour the broth mixture into the saucepan along with drained cannellini beans. Simmer on low heat for about 5 minutes until slightly thickened.
  5. Stir in vegan cream cheese until melted, add baby greens until wilted (about 1 minute), then season with lemon juice, salt, and pepper to taste.
  6. Serve topped with fresh basil.
