  • 1 cup raw cashews (soaked for 4 hours and drained)
  • 1 cup vegetable broth
  • 1 cup unsweetened almond milk
  • 3 tablespoons nutritional yeast
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 small onion, diced
  • 2 cups spinach (fresh or frozen)
  • 1 cup cherry tomatoes (halved)

Instructions

  1. Cook the pasta according to package instructions in a large pot of salted boiling water. Drain and set aside.
  2. In a high-speed blender, combine soaked cashews, vegetable broth, almond milk, nutritional yeast, salt, and pepper. Blend until smooth.
  3. Heat olive oil in a large skillet over medium heat. Sauté diced onion for 3-4 minutes until translucent.
  4. Add minced garlic and cook for an additional minute.
