  • 1/2 cup softened butter
  • 1/3 cup vegetable oil
  • 1/2 cup granulated sugar
  • 1/4 cup powdered sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 2 & 1/3 cups all-purpose flour
  • 1/4 tsp salt
  • 1 tsp baking powder
  • 5 tbsp butter
  • 2/3 cup brown sugar
  • 1 & 1/4 cups chopped pecans
  • 1 tsp vanilla extract
  • 1/3 cup heavy cream
  • 1/4 tsp cinnamon
  • pinch of nutmeg
  • pinch of salt

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl or stand mixer, cream together softened butter and vegetable oil with granulated and powdered sugar until fluffy.
  3. Mix in the egg and vanilla until combined.
  4. Gradually add flour, salt, and baking powder; mix until just combined.
  5. Scoop out cookie dough onto the baking sheet and flatten each ball slightly. Create an indentation in the center for the filling.
  6. For the filling: melt butter in a saucepan; stir in brown sugar and cook until smooth. Remove from heat; add pecans, vanilla extract, heavy cream, cinnamon, nutmeg, and salt.
  7. Fill each cookie indentation with pecan mixture.
  8. Bake for about 8-9 minutes until edges are golden; cool on the sheet before serving.
