  • 1 can (15 oz) chickpeas, rinsed and drained
  • 1 cup cherry tomatoes, halved
  • 4 persian cucumbers, diced
  • ¼ cup red onion, diced
  • ¼ cup fresh parsley, chopped
  • 2 Tbsp fresh dill, chopped
  • ½ cup crumbled feta cheese
  • 1 Tbsp olive oil
  • 2 Tbsp white wine vinegar
  • 1 lemon (juice of)
  • ½ tsp garlic powder
  • ½ tsp salt
  • black pepper

Instructions

  1. Rinse and drain the chickpeas.
  2. Dice cucumbers and halve the cherry tomatoes.
  3. Chop red onion and fresh herbs finely.
  4. In a medium bowl, combine chickpeas, cucumbers, tomatoes, onion, parsley, and dill.
  5. For the dressing, whisk together olive oil, vinegar, lemon juice, garlic powder, salt, and pepper in a small bowl.
  6. Pour dressing over salad ingredients and toss gently to coat. Top with crumbled feta.
