  • 1 tbsp Olive Oil
  • 1 Onion (finely chopped)
  • 3 Garlic Cloves (chopped)
  • 2 cm Fresh Ginger (chopped)
  • ½ Red Chilli (deseeded and chopped)
  • 1 Red Pepper (chopped)
  • 2 tbsp Thai Red Curry Paste
  • 4 Chicken Breasts (diced)
  • 5 tbsp Smooth Peanut Butter
  • 150 g Natural Yogurt
  • 150 ml Chicken Stock

Instructions

  1. Heat olive oil in a non-stick pan over medium heat. Sauté onion, garlic, ginger, red chilli, and red pepper for 3-4 minutes.
  2. Add Thai red curry paste and cook for another minute to enhance flavors.
  3. Increase heat slightly and add diced chicken; cook until white on all sides (about 4-5 minutes).
  4. In a jug, whisk together peanut butter, yogurt, and chicken stock until smooth. Pour over cooked chicken.
  5. Lower heat to medium-low and simmer for 15-20 minutes, stirring occasionally.
  6. Garnish with fresh cilantro and serve hot with rice or noodles.
