  • 2 tablespoons cocoa powder
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 225g dark chocolate (chopped)
  • 56g butter (salted or unsalted)
  • 2 eggs (room temperature)
  • 100g caster sugar
  • 90g demerara sugar
  • 1 teaspoon vanilla extract
  • 85g dark or milk chocolate chips

Instructions

  1. Preheat oven to 160ºC (320ºF) with fan or 170ºC (338ºF) conventional. Line a baking tray with parchment paper.
  2. Melt dark chocolate and butter in a heatproof bowl over simmering water, stirring until combined. Add vanilla extract.
  3. In a separate bowl, whisk together caster sugar, demerara sugar, and eggs until light and fluffy, about 5 minutes.
  4. Sift together flour, cocoa powder, baking powder, and salt in another bowl; fold in chocolate chips.
  5. Gently combine the melted chocolate mixture with the whipped eggs and sugars. Fold in dry ingredients until just combined.
  6. Drop tablespoons of batter onto the prepared tray with spacing for spreading.
  7. Bake for 12–14 minutes until set on top; cool slightly before serving.
