  • 2 boneless, skinless chicken breasts
  • 3 cups baby potatoes (quartered)
  • 2 tbsp olive oil
  • 3 cloves garlic (minced)
  • 1/2 cup heavy cream
  • 1/4 cup chicken broth
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup shredded mozzarella cheese
  • 1 tsp garlic powder
  • 1 tsp paprika
  • 1/2 tsp salt
  • 1/2 tsp black pepper

Instructions

  1. Preheat air fryer to 400°F (200°C). Toss potatoes with 1 tbsp olive oil, garlic powder, paprika, salt, and pepper. Air fry for 12-15 minutes until crispy.
  2. Season chicken breasts with salt, pepper, garlic powder, and paprika.
  3. In a skillet over medium-high heat, heat remaining olive oil and sear chicken for 4-5 minutes on each side until golden brown. Set aside.
  4. In the same skillet, sauté minced garlic until fragrant.
  5. Add chicken broth and heavy cream; simmer gently. Stir in Parmesan cheese until the sauce thickens.
  6. Return chicken to the skillet and coat with sauce; top with mozzarella cheese. Cover until melted.
  7. Add air-fried potatoes to the skillet and garnish with parsley before serving.
