  • 1 lb lean ground beef
  • 2 cups elbow macaroni
  • 1 large onion, finely chopped
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 3 cloves garlic, minced
  • 15 oz tomato sauce
  • 14.5 oz diced tomatoes (fire-roasted preferred)
  • 2 tsp Italian seasoning
  • 1 cup shredded cheddar cheese

Instructions

  1. In a large pot over medium heat, sauté the chopped onion and minced garlic in olive oil until fragrant.
  2. Add the ground beef, breaking it apart with a spoon; cook until browned.
  3. Stir in the diced bell peppers along with salt and pepper; cook for about 3–5 minutes until softened.
  4. Mix in the tomato sauce and diced tomatoes, adding Italian seasoning; stir well.
  5. Add elbow macaroni with enough water to cover by an inch; bring to a boil.
  6. Reduce heat and simmer for 10–12 minutes until pasta is tender.
  7. Remove from heat, sprinkle cheddar cheese on top, cover briefly until melted, then serve.
