  • 2 cups chicken or vegetable broth
  • 1 tablespoon olive oil
  • 1 medium onion (finely chopped)
  • 2 cloves garlic (minced)
  • Zest of 1 lemon
  • Juice of 1 lemon (about 2 tablespoons)
  • 1 teaspoon dried oregano
  • Salt and black pepper (to taste)
  • Fresh parsley (for garnish, optional)

Instructions

  1. In a medium saucepan, heat the olive oil over medium heat. Sauté the chopped onion for about 3-4 minutes until softened, then add minced garlic and cook for another minute.
  2. Stir in the rice and toast for an additional 1-2 minutes.
  3. Pour in the broth and add lemon zest, lemon juice, oregano, salt, and pepper; stir well.
  4. Bring to a boil; then reduce heat to low, cover, and let simmer for 15-18 minutes until rice is tender and liquid is absorbed.
  5. Remove from heat and let sit covered for 5 minutes. Fluff with a fork and garnish with fresh parsley if desired.
