  • 1 lb lean ground beef
  • 3/4 cup soft breadcrumbs
  • 1/4 cup onion (finely chopped)
  • 2 cloves garlic (minced)
  • 8 oz can pineapple chunks (with juice)
  • 1 cup dark brown sugar
  • 1/2 cup rice vinegar
  • 3 tbsp soy sauce
  • 1 tbs soy sauce
  • 1/2 tsp grated fresh ginger
  • 2 eggs
  • 2 tbs milk or cream
  • 1/4 tsp pepper
  • 1 medium green pepper (cut in chunks)
  • 2 tbs cornstarch
  • 2 tbs water

Instructions

  1. Preheat oven to 350°F (180°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, combine ground beef, breadcrumbs, onion, garlic, soy sauce, ginger, eggs, milk, and pepper. Mix until just combined.
  3. Shape mixture into 1-inch meatballs and place on the prepared baking sheet.
  4. Bake for 20 minutes or until cooked through.
  5. For the sauce, mix pineapple juice, brown sugar, rice vinegar, and soy sauce in a skillet over medium heat; bring to boil.
  6. Thicken the sauce by adding cornstarch mixed with water; stir until thickened.
  7. Add pineapple chunks and green pepper; boil for one minute. Combine with meatballs in the skillet until heated through.
