  • 1 ripe medium banana, mashed
  • 1/4 cup unsweetened applesauce
  • 2 tbsp peanut butter (or any nut butter)
  • 1 egg (or flax egg)
  • 1 tsp vanilla extract
  • 1/4 tsp ground cinnamon

Instructions

  1. Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. In a mixing bowl, combine the rolled oats, mashed banana, applesauce, nut butter, egg or flax egg, vanilla extract, and cinnamon. Stir until well blended.
  3. Use a cookie scoop or spoon to form cookie balls (about 1-½ to 2 tablespoons each) and place them on the prepared baking sheet. Flatten each cookie to about ½ inch thick.
  4. Bake for approximately 10 minutes or until slightly golden around the edges. Allow cooling before serving.
