  • 2 tablespoons yellow curry powder
  • 1.5 teaspoons garam masala
  • 1/4 teaspoon cayenne pepper (more or less to taste)
  • 1 teaspoon kosher salt
  • 1 13-ounce can coconut milk
  • 3 tablespoons olive oil
  • 1 medium onion, chopped
  • 1 jalapeno, seeded and chopped
  • 1 tablespoon garlic, minced
  • 1 tablespoon ginger, minced
  • 1 tablespoon fresh lemon juice
  • 1 cup chicken broth
  • 1 tablespoon cornstarch
  • 2 tablespoons cold water
  • 1/2 cup cilantro, chopped

Instructions

  1. Toast spices in a large skillet over medium heat until fragrant (2 minutes).
  2. Marinate chopped chicken with half of the toasted spices and salt in a medium bowl.
  3. Add coconut milk to the chicken; let it marinate while you prepare vegetables.
  4. Sauté onions and jalapenos in olive oil until translucent.
  5. Add garlic and ginger; cook until fragrant (1 minute).
  6. Stir in lemon juice, then add chicken mixture and broth; bring to a boil.
  7. Reduce heat to low; simmer until chicken is cooked through (5–8 minutes).
  8. Thicken the curry with a cornstarch slurry if desired.
  9. Finish with chopped cilantro before serving hot.
