Ingredients

  • 1 tbsp butter
  • 2 mushrooms, sliced
  • Handful of spinach
  • 1/2 tsp cumin seeds
  • 1/2 tsp turmeric powder
  • 1/2 tsp chili powder
  • Pinch salt
  • 1 frozen paratha
  • 1 egg
  • 1 tbsp mango chutney
  • 1 tbsp grated cheese (cheddar and mozzarella)

Instructions

  1. Heat a frying pan over medium heat and melt the butter.
  2. Sauté sliced mushrooms for 3 minutes, then add spinach until wilted.
  3. Stir in cumin seeds, turmeric powder, chili powder, and salt; cook for a few more minutes.
  4. Cook the frozen paratha according to package instructions in the same pan.
  5. Whisk the egg in a small bowl and pour it into the pan to form an omelette.
  6. Place the paratha on the uncooked side of the omelette; press down gently and flip after one minute.
  7. Add mango chutney, sautéed veggies, and cheese on top before folding.
