  • 30 oz. great northern beans (drained and rinsed)
  • 2 cups frozen corn
  • 1/2 cup yellow onion (diced)
  • 2 garlic cloves (minced)
  • 4 oz. hatch green chiles
  • 1 lb. boneless skinless chicken (breast or thighs)
  • 1/2 cup plain cream cheese (regular or dairy-free)
  • 1 1/4 cup chicken broth
  • 1 tsp chili powder
  • 1 tsp cumin
  • 1 tsp salt
  • 1/4 tsp black pepper (plus more to taste)
  • 2 tbsp lime juice

Instructions

  1. Gather and prepare all ingredients.
  2. Layer the beans, corn, onion, garlic, green chiles, spices, and chicken in the Instant Pot. Top with cream cheese and pour in the chicken broth.
  3. Close the lid securely and set to pressure cook on high for 15 minutes.
  4. Once done, let pressure release naturally for 10 minutes before manually releasing any remaining pressure.
  5. Shred the cooked chicken and stir it back into the chili until well combined.
