  • 1 small white onion, diced
  • 1 cup carrots, diced
  • 1 cup celery, diced
  • 6 cloves garlic, minced or pressed
  • 1/2 teaspoon crushed red pepper flakes
  • 6 to 8 cups chicken or vegetable stock
  • 1 (14-ounce) can fire-roasted diced tomatoes
  • 1 1/2 tablespoons Italian seasoning
  • 1 cup (8 ounces) uncooked orzo pasta
  • 2 large handfuls fresh baby spinach or kale
  • Fine sea salt and freshly cracked black pepper, to taste
  • Optional Toppings: Freshly grated Parmesan cheese, chopped fresh basil

Instructions

  1. In a large stockpot, heat olive oil over medium-high heat. Sauté diced onion, carrots, and celery for 5–7 minutes until softened. Add garlic and red pepper flakes; cook for another 2 minutes.
  2. Pour in stock, add fire-roasted tomatoes, and stir in Italian seasoning. Bring to a gentle simmer.
  3. Stir in uncooked orzo, cover, and simmer until orzo is al dente, stirring occasionally.
  4. Add spinach or kale until wilted. Adjust seasoning with salt and black pepper to taste.
  5. Serve immediately, garnished with Parmesan cheese or fresh basil if desired.
