  • 300 grams Kielbasa sausage
  • 750 grams potatoes
  • 1 medium onion
  • 1 medium carrot
  • 2 celery ribs
  • 4 garlic cloves
  • 5 cups chicken stock
  • 1¼ cups full-fat milk
  • 100 grams cheddar cheese
  • Olive oil
  • Salt
  • Pepper
  • Red chili flakes

Instructions

  1. In a large pot, heat olive oil over medium heat. Sauté Kielbasa until crispy (4-5 minutes), then set aside.
  2. In the same pot, cook diced onion, carrot, and celery for about 5 minutes until softened.
  3. Add chopped garlic and red chili flakes; cook for another minute.
  4. Stir in cubed potatoes and chicken stock; bring to a boil then simmer covered for 10-12 minutes until tender.
  5. Temper milk by mixing with a ladle of soup before adding it back to the pot with the Kielbasa.
  6. Gradually stir in cheddar cheese until melted; simmer for an additional 2-3 minutes.
  7. Season with salt and pepper, then garnish with chopped parsley before serving.
