Ingredients

Scale
  • 1 cup all-purpose flour
  • 3/4 cup granulated sugar
  • 1/4 tsp salt
  • 1/2 cup unsalted butter, softened
  • 2 large eggs
  • 2 tbsp lemon zest
  • 2 tbsp lemon juice
  • 1/2 tsp vanilla extract
  • 1/2 cup powdered sugar (for glaze)
  • 1 tbsp lemon juice (for glaze)
  • 1 tsp lemon zest (for glaze)

Instructions

  1. Preheat your oven to 350°F (175°C). Line an 8×8-inch baking pan with parchment paper.
  2. In a mixing bowl, beat together the softened butter and sugar until light and fluffy (3–5 minutes).
  3. Add eggs one at a time, mixing well after each addition. Stir in lemon juice, zest, and vanilla until combined.
  4. Gently fold in flour and salt until just combined—avoid overmixing.
  5. Pour batter into the prepared pan and smooth the top. Bake for 22–25 minutes or until a toothpick inserted comes out clean.
  6. Allow brownies to cool completely before preparing the glaze by whisking together powdered sugar, lemon juice, and zest.
  7. Spread glaze evenly over cooled brownies; chill for about 15 minutes before slicing.
