  • 2 sticks celery (finely chopped)
  • 2 medium carrots (peeled & finely chopped)
  • 1/2 medium onion (chopped)
  • 1 tablespoon butter
  • 1 tablespoon olive oil
  • 3 cloves garlic (minced)
  • 6 cups chicken broth
  • 1.5 pounds uncooked chicken breasts
  • 1 cup uncooked orzo
  • 1 tablespoon lemon juice (or to taste)
  • Salt & pepper (to taste)

Instructions

  1. In a large soup pot over medium-high heat, melt butter and olive oil. Add chopped celery, carrots, and onions; sauté for 5–7 minutes until tender.
  2. Stir in minced garlic; cook for about 30 seconds. Add flour and cook for another minute.
  3. Pour in chicken broth while stirring to dissolve flour lumps; add Italian seasoning and chicken breasts. Bring to a boil.
  4. Cover slightly with a lid; reduce heat and simmer for about 15 minutes.
  5. Add uncooked orzo; cook uncovered for another 10 minutes until orzo is tender, stirring occasionally.
  6. Remove cooked chicken, shred it, return to soup, then stir in lemon juice, salt, and pepper as needed.
