  • 1 can white (cannellini) beans (drained & rinsed)
  • Mini cucumbers (or 1/2 English cucumber), chopped
  • Red onion, chopped
  • Red bell pepper, chopped
  • Little tomatoes (grape or cherry), halved
  • Kalamata olives, pitted & chopped
  • Fresh parsley, chopped
  • Feta cheese, crumbled
  • Olive oil
  • Red wine vinegar
  • Dried oregano
  • Salt & pepper

Instructions

  1. In a large mixing bowl, combine all the salad ingredients: white beans, cucumbers, red onion, red bell pepper, tomatoes, olives, parsley, and feta cheese.
  2. In a separate small bowl or jar, whisk together the olive oil, red wine vinegar, dried oregano, salt, and pepper to make the dressing.
  3. Pour the dressing over the salad mixture and toss gently until everything is well combined.
