  • 1 flax egg (or 1 large egg)
  • ½ medium yellow onion (diced)
  • 3 cloves garlic (minced)
  • 3 tbsp nutritional yeast (or parmesan cheese)
  • 1 ½ tbsp Italian seasoning
  • ½ cup whole wheat breadcrumbs
  • 1 ½ tbsp tomato paste

Instructions

  1. Preheat your oven to 350°F and line a baking sheet with parchment paper.
  2. In a food processor, combine cooked lentils, flax egg, onion, garlic, nutritional yeast, Italian seasoning, salt, pepper, and tomato paste. Pulse until mixed but still textured.
  3. Add breadcrumbs gradually until the mixture holds together.
  4. Form tablespoon-sized balls and place them on the prepared baking sheet.
  5. Bake for 30–35 minutes, flipping halfway until golden brown.
