  • 3 lbs organic chuck roast
  • 4 dried guajillo peppers
  • 4 dried ancho chiles
  • 4 chipotle peppers in adobo
  • 12 organic corn tortillas
  • Shredded Oaxaca cheese
  • Chopped fresh cilantro

Instructions

  1. Toast guajillo and ancho chiles in a skillet until fragrant. Blend with chipotle peppers, onion, garlic, crushed tomatoes, apple cider vinegar, bay leaves, oregano, thyme, cumin, cinnamon, smoked paprika, and allspice until smooth.
  2. In a large pot or slow cooker, heat olive oil and sear seasoned chuck roast until browned. Pour the blended spice mixture over the meat along with beef stock and water. Cover and cook on low for about 3 hours or until tender.
  3. Shred the beef in the pot. Warm tortillas in a skillet, fill them with beef and cheese, fold in half, and fry until crispy.
  4. Serve hot topped with cilantro and pico de gallo.
