  • 3 lbs organic chuck roast beef
  • 4 dried guajillo peppers
  • 4 dried ancho chiles
  • 4 chipotle peppers in adobo
  • 1 onion (chopped)
  • 4 garlic cloves
  • 12 organic corn tortillas
  • Shredded Oaxaca cheese

Instructions

  1. Toast guajillo and ancho peppers in a saucepan. Blend with chipotle peppers, onion, garlic, crushed tomatoes, apple cider vinegar, bay leaves, and spices until smooth.
  2. Sear seasoned beef chunks in olive oil until browned. Transfer to a slow cooker and add the blended sauce along with beef stock and water. Cook on low for about 150 minutes until tender.
