  • 2 lbs beef chuck, cut into 1-inch cubes
  • 3 tbsp flour
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 2 tbsp olive oil
  • 1 large onion, diced
  • 4 garlic cloves, minced
  • 4 cups beef broth
  • 1 cup red wine (optional)
  • 4 large carrots, sliced
  • 3 medium potatoes, peeled and cubed
  • 2 celery stalks, sliced
  • 2 tbsp tomato paste
  • 2 bay leaves
  • 1 tsp thyme
  • 1 tsp rosemary

Instructions

  1. In a bowl, mix flour, salt, and pepper. Coat the beef cubes in the mixture.
  2. Heat olive oil in a large pot over medium-high heat. Brown the beef in batches; set aside once done.
  3. In the same pot, sauté onions and garlic until softened.
  4. Stir in tomato paste and red wine (if using); cook for about two minutes.
  5. Return beef to pot and add broth, carrots, potatoes, bay leaves, thyme, and rosemary. Bring to a boil then reduce heat to low; simmer for 2 to 2.5 hours until tender.
  6. Remove bay leaves; adjust seasoning before serving.
