  • 1½ cup cucumber
  • ¾ cup corn kernels
  • ¾ cup olives
  • ½ red onion
  • ⅓ cup parsley
  • 1 ripe avocado (optional)
  • ¾ cup feta cheese
  • Dressing: olive oil, lemon juice, mustard, maple syrup, salt, pepper, oregano

Instructions

  1. Cook quinoa: Rinse and drain quinoa, then combine in a pot with water and salt. Bring to a simmer and cook for 10-15 minutes until water is absorbed. Fluff with a fork.
