Roasted Garlic Potatoes au Gratin is a creamy, cheesy side dish that transforms humble potatoes into a luxurious treat.   • 8-9 medium starchy potatoes, thinly sliced
  • 1 head garlic
  • 1 cup heavy cream
  • 1/4 cup whole milk
  • 1 tablespoon unsalted butter
  • 1 teaspoon fresh thyme leaves
  • 1/4 teaspoon nutmeg
  • 1/2 cup grated parmesan cheese
  • 2 cups shredded Gruyère or mozzarella cheese
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Roast the garlic by cutting off the top and drizzling with olive oil. Wrap in foil and bake for about 30 minutes until soft.
  3. Grease a baking dish with butter. Slice potatoes thinly using a mandoline.
  4. Layer potato slices upright in the dish.
  5. In a saucepan, heat cream, milk, butter, half parmesan, thyme, nutmeg, salt, and pepper until melted but not boiling.
  6. Squeeze roasted garlic into a bowl and mash into a paste. Stir into the cream mixture.
  7. Pour the creamy mixture over the layered potatoes and cover with foil.
  8. Bake for 40 minutes covered, then uncover and add remaining cheeses on top.
  9. Bake uncovered for another 30 minutes until bubbly and golden brown.
