  • 1 yellow onion
  • 2 celery ribs
  • 1/2 cup carrots
  • 3 cloves garlic
  • 5 cups chicken broth
  • 1 cup heavy cream
  • 1 1/4 pounds red potatoes
  • 1 tsp dried basil
  • 1/2 tsp dried parsley
  • 1/2 tsp dried oregano
  • 1/2 tsp ground mustard
  • 1/4 tsp black pepper
  • 2 tbsp butter
  • 3 tbsp all-purpose flour
  • 1 tsp soy sauce
  • 1 tsp hot sauce
  • 2 cups shredded cheddar cheese (optional)
  • Red pepper flakes
  • Fresh parsley

Instructions

  1. In a large pot over medium heat, brown the Italian sausage for about 10–12 minutes. Set aside while reserving some drippings.
  2. Sauté diced onion, celery, and carrots in reserved drippings with butter until softened (about 5 minutes). Add minced garlic and sauté for another minute.
  3. Sprinkle flour over vegetables and stir well; cook for 2 minutes. Gradually add chicken broth while stirring to deglaze the pot.
  4. Mix in heavy cream along with spices, then add diced potatoes. Simmer uncovered until potatoes are tender (20–25 minutes).
  5. Return the cooked sausage to the pot; mix well and serve hot.
