  • 4 bone-in, skin-on chicken thighs
  • 1 tablespoon olive oil or butter
  • 1 onion, finely chopped
  • 3 garlic cloves, minced
  • 2 tablespoons all-purpose flour
  • 2 cups chicken broth (low sodium)
  • ½ cup heavy cream
  • 1 teaspoon dried thyme
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 1 cup long-grain white rice

Instructions

  1. Season chicken with salt, pepper, paprika, and thyme. In a large skillet, heat olive oil over medium-high heat and sear chicken skin-side down until golden brown (5–6 minutes). Flip and cook for another 4–5 minutes; set aside.
  2. In the same skillet, sauté chopped onions until translucent (3–4 minutes), then add minced garlic for another 30 seconds. Stir in flour to create a roux.
  3. Gradually whisk in chicken broth and heavy cream; simmer until thickened. Season to taste.
  4. Return chicken to skillet, cover, and simmer on low for 10–12 minutes until fully cooked.
  5. Cook rice separately according to package instructions.
  6. Serve fluffy rice topped with smothered chicken and gravy.
